Eggsquisite Cafe: A Gluten-Free Friendly Breakfast Restaurant in Texas

It’s hard to believe that I traveled 65 miles for breakfast—which, by the time we rolled into Waxahachie, had officially turned into brunch. But when my daughter-in-law Elle starts talking about gluten-free pancakes, waffles, and French toast, I listen.


So Jeff and I caravanned north on Interstate 35 with Nate, Elle, and the grandkids—equal parts birthday celebration and gluten-free reconnaissance mission.


Our destination: Eggsquisite Cafe. Our first challenge: getting in.


We had to get in line…online…to secure a table. Which felt very modern and slightly humbling. But somehow, by the time we arrived, our table was ready and waiting like we were important people. (We are not.)


A Menu with Plenty of Gluten-Free Options

Three of us at the table are gluten-free, which usually means a quick scan of the menu followed by a polite sigh. Not here. This was a full-blown dilemma—too many good choices. I was thrilled.

My granddaughter had no such struggle—she went straight for the Mini Mouse pancakes, because of course she did. Meanwhile, I had my heart set on waffles. I can’t even remember the last time I had one. Years? Decades? A previous life?

They did not disappoint.

Gluten-Free Waffles Around of Dallas

The Lemonberry waffles arrived crispy on the outside, tender inside, and topped with a bright, lemony drizzle that felt downright cheerful. I told myself I would savor the flavor as-is…and then immediately covered the entire plate in syrup. Balance is important.

Around the table, there was a lot of nodding, very little talking, and absolutely no leftovers. Always a good sign.


And then, the next challenge: the coffee.


Because for me, a breakfast spot can have the best food in the world, but if the coffee is sad, I’m not coming back. Thankfully, the owner clearly understands this sacred truth. The coffee was excellent, which sealed it for me.


We made sure to thank him on our way out—for the meal, the gluten-free options, and the hope he’s given us. Then we casually suggested he open a location in Waco. You know, no pressure.
