Gluten-free pancakes in Waco? Yes, ma’am!


Moving to a new city can feel a little overwhelming, but Waco has been nothing but warm and welcoming to these two midwesterners. This past Sunday, while Jeff and I were waiting for a table at Café Cappuccino, my hubby struck up a conversation with a sweet couple. Before we knew it, they’d invited us to join them for brunch. Honestly, how kind is that? What could’ve been a long wait turned into an hour of laughter, swapping stories, and feeling like we’d just made instant friends.


They even introduced us to the owner of the café, which was such a fun bonus. And here’s where I really lit up—Café Cappuccino has a gluten-free menu. I’ve been in Waco for a little while now, and it was the very first one I’d come across! Sure, breakfast places are usually easy enough to navigate, but this was different—they actually make gluten-free specialty pancakes. I wasted no time ordering my favorite one.


When the blueberry pancake arrived, I asked if they were sure it was gluten free. The waitress laughed.  This thing was the size of a dinner plate! It was golden on the outside, fluffy on the inside, and absolutely loaded with juicy blueberries. Every bite soaked up just the right amount of maple syrup. I don’t say this lightly—it tasted every bit as good as one I’d make at home. Y.U.M.

As I sat enjoying my pancake, I couldn’t help but think about how brunch has always been a thread in Jeff’s and my life together. When our moms were still alive, Sundays were reserved for family. First with Jeff’s mom, and later, after she passed, with mine. We’d go to church, then head out for brunch with them. It was our weekly ritual, a simple tradition that made Sundays feel extra special. Even after both of our moms had passed, we kept the tradition alive. For us, brunch is more than just a meal—it’s a way of honoring those memories and making space for new ones.


So, finding Café Cappuccino felt like a little gift. Not only was the food delicious, but the atmosphere reminded me of why I love Sunday brunch so much: it’s about connection, community, and slowing down to enjoy life’s simple pleasures. I have a feeling this spot will become part of our new Sunday rotation here in Waco.
